Prep Time: 10 Minutes
Cook Time: 25 Minutes
1 Bunch Chard, (Leafy Green Veg.) Wash & Dry
2 Tbs. Extra-Virgin Olive Oil
4 Minced Scallions
Sea Salt
2 Tsp. Minced Garlic

Pinch Of:
Red Pepper Flakes
Nutmeg
4 Org.Eggs
8 Tomatoes, Quartered
8 Kal.Olives Chopped
2 Tbs. Chopped Basil For Garnish
2 Tbs. Chopped Parsley

PREHEAT OVEN TO 350 DEGREES
Remove Stems From Chard Leaves, Chop Leaves Into Small Pieces.
Chop Rest Of Stems Into 1/2″ Pieces.
HEAT ON MEDIUM IN PAN:
1 Tbl. Spoon Olive Oil

ADD IN PAN:
Scallions
Chard Stems
Pinch Of Salt
Sauté Until Scallions Are Clear
COOK FOR 4 MINUTES…

NEXT ADD IN:
Garlic
Red Pepper Flakes
Pinch Of Salt
Sauté For 30 Seconds More
Then Stir In The Chard & Pinch Of Salt Cook Until Tender Another Minute Or Two.
REMOVE FROM HEAT
Lightly Grease Four 1-Cup Ramekins With The Remaining Olive Oil.
IN RAMEKIN’S:
Spoon In 1/4 Of CHARD Mixture

SPRINKLE ON 1/4 OF CHEESE
IN 4 BOWLS:
Crack 1 Egg On Top Of Cheese
TOP OFF CHEESE:
Tomatoes
Olives
Pinch Of Salt
PLACE BOWLS ON BAKING SHEET:
Bake 20 To 25 Min’s Until Eggs Are White & Set And Yolk Is Little Runny.

SPRINKLE BASIL & PARSLEY
SERVE:
In Ramekins Or Transfer Onto Plate.
